Where did jalapeno cornbread originate? ›

In Texas, Mexican influence has spawned a hearty cornbread made with fresh or creamed corn kernels and jalapeño peppers and topped with shredded cheese.

Why do southerners not put sugar in cornbread? ›

The most common theory is a change in cornmeal itself. Until early in the 20th century, Southern cornmeal was made with sweeter white corn and it was water-ground. When industrial milling came along, that changed. The steel-roller mills used yellow corn that was harvested before it was ripe, so it had less sugar.

What is the best cornmeal to buy to make cornbread? ›

As for the best cornmeal for cornbread, either fine- or medium-grind cornmeal is a great choice. Medium-grind cornmeal will bring slightly more texture and grittiness to the batter, which you may or may not want (it's up to you!). You can use fine or medium cornmeal in these extra corny muffins.

How do Southerners eat cornbread? ›

While on its own, Southern cornbread may be underwhelming, it's neutral flavor and crumbly texture make it the perfect vessel to soak up liquidy foods, like cranberry sauce or turkey gravy. Or, it can be eaten on its own, perhaps mixed with gooey cheese or spicy jalapeños.

Does cheesy cornbread need to be refrigerated? ›

Room-temperature cornbread: Cornbread stored at room temperature (roughly sixty to seventy-five degrees Fahrenheit) will last one to three days without signs of spoilage. Refrigerated cornbread: You can reliably keep cornbread in the refrigerator for a couple of days.

Is cornbread healthy? ›

Although it's relatively high in carbs and sodium, it contains several important nutrients, including phosphorus, selenium, and B vitamins. It's also versatile, easy to make, and can be enjoyed in moderation as part of a healthy diet.

What did Native Americans call cornbread? ›

Among them was a version of Indian bread made of cornmeal, salt and water called pone or corn pone. The name came from the Algonquin word apan, meaning "baked." The Narragansett word for cornbread, nokechick, became no-cake and then hoe-cake.

What culture eats cornbread? ›

Cornbread is as American as apple pie, but its origins date back far beyond the inception of this country. With roots in Mesoamerican, Native American, and African cultures; history and people have shaped this iconic American bread into what it is today.

What does cornbread mean in slang? ›

The expression "someone's cornbread ain't done in the middle" is a southern American idiom that means that someone is not very smart or intelligent. The metaphor of "cornbread" refers to a popular southern bread made from cornmeal, which is often baked in a pan.

What are the two types of cornbread? ›

Southern cornbread has traditionally been made with little to no sugar and a higher cornmeal-to-flour ratio, while Northern style cornbread is sweeter and more cake-like.

Is Southern cornbread sweet or savory? ›

Real, traditional, Southern-style cornbread is savory, not sweet, and always has been.

What is the difference between yellow cornbread and white cornbread? ›

The only substantial difference between white cornmeal and yellow cornmeal is right there in the names: their colors. The two varieties get their hues from nothing more than the different colors of the kernels of corn from which they are ground.

Does southern cornbread have sugar in it? ›

Sugar and flour were added to accommodate these changes. Even with the addition of flour and sugar, today's Southern cornbread doesn't taste the same as the original versions. To get that old-fashioned taste, Serious Eats insists on using stone-ground cornmeal and eliminating sugar and flour entirely.
